Neda’s Paleo and Low Carb bagels

I made these delicious bagels with my friend Neda during my Instagram weekly live, and I absolutely loved them! Neda has great recipes, so check out her website https://healthywithnedi.com and her Instagram page https://www.instagram.com/healthywithnedi/

They make a great addition to your diet and are both 7-day plan and 6-week plan compliant.

They are delicious with smoked salmon and a squeeze of lemon! You can also add vegan cream cheese if you like. I hope you enjoy them as much as I did 🙂

Ingredients

Makes 6 bagels

1 cup or 100g of  almond flour

3 tbsp coconut flour

3 tbsp ground flaxseeds

1 tsp baking soda

1/2 tsp sea salt

1 tbsp apple cider vinegar

1 tbsp water

1 whole egg

5 egg whites

2 tbsp Trader Joe’s everything but the bagel seeds (any sesame seeds can work)

extra-virgin olive oil cooking spray

175 Calories, 7g carbs, 4g fibre, 3g net carbs, 11g protein

Method

Preheat oven to 350 F or 150 C.

In a mixing bowl, add the almond flour, coconut flour, flaxseeds, baking soda and sea salt.

In a separate mixing bowl add the apple cider vinegar, water and eggs. Whisk well with a fork. Add the egg mixture to the bowl with dry ingredients and mix until well combined.

Place batter into a plastic ziplock bag and cut a small hole in one of the corner.

Lightly grease donut molds with cooking spray. Squeeze out the bagel batter into each mold evenly.

Sprinkle bagels with everything but the bagel seeds and bake for 20 minutes, until golden.

 

Tip: You can refrigerate the bagels for five days or store in the freezer and reheat in toaster or oven.
