  • 1 gem lettuce
  • 3 carrots
  • 6 radishes
  • 1/2 avocado
  • 1 can of mackerel in olive oil drained (125g)
  • Dressing:
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/2 tsp sea salt
  • 1/8 tsp black pepper


  1. Rinse and chop the lettuce, cut the carrots into slices, halve the radishes and chop the avocado into medium size cubes.

  2. Put the dressing ingredients into a small container.

  3. Add all your ingredients to the lunchbox with the mackerel and store in the fridge or a cooler bag until needed, adding the dressing just before eating.

Storage Tips

This dish can be prepared in advance. It keeps in the fridge for up to 2 days without the dressing mixed in.
