  • 1 cup of quinoa
  • 2 cups of vegetable broth
  • 1 onion
  • 4 garlic cloves
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground pepper
  • Optional: Curly parsley to garnish


  1. Rinse the quinoa.
  2. Place the rinsed quinoa and 1 cup of broth in a saucepan. Bring to the boil, simmer for 5 minutes and turn the heat off, allowing the quinoa to absorb the liquid.
  3. Place a pan on medium heat and add the olive oil. Add the chopped onion and crushed garlic. Cook for 5-7 minutes until the onion softens so it starts tasting sweet.
  4. Add the quinoa, salt, pepper and remaining broth. Turn the heat up, bringing it to a boil. Turn the heat to low and let it simmer until all the liquid has been absorbed, covering the pan for about 5 minutes.
  5. Your quinoa is ready! Garnish with chopped parsley or any herbs and serve. Tip: You can replace the salt with soy sauce if you’d like to give it an Asian twist.

Storage Tips

This dish can be prepared in advance. It keeps in the fridge for up to 2 days.
