Sunshine on a plate!

Build the body’s natural defences, manage your blood sugar and your blood pressure with this fresh and uplifting dish.

Mint accompanies the oranges, allowing for wonderful relief from digestive issues and detoxification. Vibrant kernels of pistachios pack in antioxidants that contain potent anti-inflammatory properties – and phytosterols, which are associated with disease-busting and immune defence.

Minerals such as zinc, iron, magnesium, potassium and calcium make this dish more than just a pretty one to look at. All ingredients in all recipes play their part in gut health and inflammation reducing.

Just breathing in the smell of anti-inflammatory cinnamon will boost cognitive function. Enjoy!

  • 3 oranges
  • 1 tsp cinnamon
  • 1 tbsp chopped mint
  • 1oz or 30g raw pistachio kernels

  1. Preheat your oven at 160 C / 380 F. Place the pistachios on a baking tray and roast for 15 minutes.

  2. Take them out of the oven and let them cool down.

  3. Once cooled down, chop them roughly.

  4. Peel the oranges, slice them and place them on a plate.

  5. Sprinkle the cinnamon, chopped mint, and chopped roasted pistachios.
