Freeze-dried coffee is the premium form of instant coffee. Freeze-dried coffee is made by freezing brewed coffee into ice, then slowly removing the water by sublimation (a process where ice turns directly into vapor without becoming liquid). This method preserves more of the coffee's aroma and flavor. Freeze-dried coffee aslo tends to retain slightly more antioxidants. But if you can not get hold of freeze-dried then instant would be fine or an espresso shot.
