It may be a bit too crumbly for rolling out. You could try adding 1 tbsp of arrowroot powder to help bind the ingredients and roll between 2 sheets of parchment paper and if it becomes too crumbly pop in back in the fridge for 10 minutes.

Oops re eggs, missed that! They are delicious (I added a few tiny (10g) crystalised ginger pieces. The problem is how to only eat one, haha!

You would struggle to halve the recipe as it contains 1 egg but you can freeze half the dough. Just defrost overnight or for 12 hours in the fridge before you roll it out.
