Whip up an easy delicious lunch with this sweet potato and zucchini soup! It’s flavourful, brimming with anti-inflammatory goodness, and simple to make. Sweet potato is the star of the show, providing fiber for blood sugar support and beta-carotene, a pro-vitamin A compound that fights inflammation. Beta carotene and vitamin A are essential for strong immunity, gut health, good vision, and skin health. Research shows that beta-carotene acts like internal sunscreen, protecting us from the harmful effects of UVA and UVB rays on our skin and eyes (Baswan et al, 2021). Zucchini, or courgettes, are a type of summer squash with a high water content. This makes them a great addition to hydrating meals like soup. Their creamy flesh pairs well with onion and soaks up the pungent flavors of turmeric and black pepper. Turmeric gives the soup its vibrant color. It contains a compound called curcumin, which has powerful anti-inflammatory and antioxidant properties. I agree with Raksha - can you please give a more or less weight for the zucchini and sweet potatoes? Depending on where we are in the world small / medium / large veggies can mean totally different things.

Thanks for the feedback. We tend for vegetables to give a rough size as if we say for example 300g zucchini and your zucchini weights 330g we would hate for you to be throwing away 30g of zucchini as it didn't match the weight. But we understand where you are coming from.

in relation the stock, please clarify if this is veg stock in the recipe. I assume other stock options could be used as well? I had made a chicken stock previously and because I had it in the freezer I decided to use that for 500ml and then beg for the other 500ml and it turned out delicious.

Please could the approximate weight be added when describing vegetables as small, medium, large. In this recipe, I made it today and it's no ways 4 portions even though I used a "large zucchini", same for the sweet potatoes pls. It would just help be more precise for the recipes and getting the portions right. ty
