Hi Sarah, whisking the eggs in the fluffy pancake recipe will make the pancakes more fluffy. It depends on how you like your pancakes and if you have time in the morning to whisk your eggs. Both taste yummy though!

The paleo pancakes recipe which is identical other than it uses 2 not 4 eggs. This one uses 2 egg yolks and says to whisk the egg whites. Is that 2 egg whites or 4 and does that mean 2 egg yolks are not used as recipe states 4 eggs? The only difference with the paleo pancake recipe is the egg whites are not whisked. Does it make a difference. Not sure which recipe to use? Many thanks. Look forward to making them!
