Ingredients
- 2 gem lettuces
- 6 boiled eggs
- 10oz or 300 g of cooked peeled prawns
- 6 Persian/mini cucumbers or 1 regular cucumber
- 9oz 250g of cherry tomatoes
- 6 small cooked beetroots
- About 15 black or green olives
- 2 spring onions
- 2 tablespoons of homemade olive oil and lemon mayonnaise (or regular shop-bought mayonnaise)
- 1 tbsp of chopped chives
- A sprinkle of smoked paprika
