This quinoa flatbread is a simple, nourishing alternative to traditional bread, made with just two ingredients and naturally gluten-free. Using quinoa as the base, it provides a good source of plant-based protein, complex carbohydrates, and fibre, making it a more balanced option than refined flours.
Quinoa is a complete protein, meaning it contains all nine essential amino acids. This makes quinoa flatbread especially supportive for maintaining muscle mass, supporting blood sugar balance, and promoting sustained energy. Its higher protein content also helps with satiety, making meals more satisfying and balanced.
Unlike many gluten-free breads that rely on gums or starches, this flatbread keeps ingredients minimal and close to their natural form, which many people find easier to digest. The texture is soft yet sturdy enough to use as a wrap, flatbread, or side for soups and salads.
While the base recipe uses only two ingredients, you can easily customise it to suit your taste. Optional additions such as sesame seeds or nigella seeds add gentle flavour, texture, and extra nutrients without complicating the recipe. Other mild spices or herbs can also be sprinkled on top before cooking for variety.
This quinoa flatbread stores well and is ideal for batch cooking, making it a practical choice for busy weeks. Whether you’re gluten-free, looking to increase protein intake, or simply want a wholesome homemade bread alternative, this easy quinoa flatbread fits seamlessly into a balanced, anti-inflammatory lifestyle.

UPDATE: I cooked on the pan and they turn out well. Soft and flexible. Quinoa is not my thing but it was worth the try and I would suggest you try cooking on the hob in frying pan!

Hello, I want to check if anyone has tried making this in a frying pan? I have the Le Creuset pancake pan and wonder if it will work? I have previously made all my flat breads on pan but never used quinoa and unsure on texture/cooking requirements.

Some ovens run at different temps, perhaps try reducing the original baking time by 5 minutes.

after flipping I left in oven for further 5 minutes as I could see the edges were burning, unfortunately much of the fllatbread came out cripsy rather than soft. :-(
