This Extra Light Banana Bread was created by Yalda with breakfast in mind — a lighter version of her original recipe, explicitly designed to avoid spiking blood sugar levels first thing in the morning. It’s the perfect option for anyone looking for a wholesome, nourishing start to the day without the sugar crash.
Packed with gut-healthy ingredients, this banana bread is ideal for the whole family. Cinnamon, a key ingredient, acts as a natural sweetener while helping regulate blood sugar levels. It also adds warmth and depth of flavor without the need for refined sugars, making it an excellent choice if you’re avoiding sweeteners or working on stabilizing your energy levels throughout the day.
This version is not only lower in sugar but also lower in fat than traditional banana bread, making it a lighter, more balanced option. It’s especially perfect for those who don’t have a sweet tooth or who prefer subtle flavors in the morning.
This light banana bread is not just delicious, it supports gut health, balances energy, and provides a nourishing alternative to traditional baked goods. Whether served fresh or toasted, it makes a fantastic breakfast or anytime snack.
Enjoy every bite, mindfully.
Ingredients
Directions
Total time: 30min
Preheat your oven to 350 F / 175 C (fan oven). Mash 3 bananas in a large bowl and whisk in the eggs.
Add the cinnamon, ground almonds, arrowroot powder, dark chocolate chips, and bicarbonate of soda. Combine well.
Pour the mix into a greased cake tin lined with baking paper and add a sprinkle of pure stevia.
Bake for 30 minutes at 350 F / 175 C. The cooking time can vary depending on the oven. To make sure it is cooked through, insert a toothpick, and see if it comes out clean. If not, it needs cooking longer. Let the banana bread cool down completely before eating it.
You can also make muffins with the recipe, just bake them for 15-18 minutes instead!
Serving tips
Pairs well with a cup of herbal tea or Moroccan Spiced Coffee.
Storage tips
Store in an airtight container in the fridge for up to 5 days. You can also freeze the individual servings. Place them on a baking sheet, then when fully frozen, remove and place them in the container/bag for up to 3 months.
