Banana, Carrot and Chocolate Chip Muffins

Enjoy an indulgent healthy treat with these banana, carrot, and chocolate chip muffins. Made with ground almonds and coconut sugar, these muffins are naturally gluten-free and won’t spike your blood sugars like conventional baked goods do. Coconut sugar has a lower glycemic index compared to regular sugar and contains nutrients such as vitamins C and E, plus iron, zinc, potassium, and phosphorus. Fiber from carrots and bananas also helps to regulate blood sugar levels. Dark chocolate chips add a touch of indulgence and all-important anti-inflammatory antioxidants. Our banana, carrot, and chocolate chip muffins are perfect for packed lunches or a healthy snack any day of the week!

Pair these muffins with:

Moroccan Spiced Coffee Healthy Frappuccino Activated Almonds

Yes definitely, that may be worth a try. Let me know how you get on, and I'll try and make these again soon!

I did leave them to cool, but it didn’t help. Maybe a silicone muffin tray, would be the way forward or perhaps use baking paper instead.

So sorry this happened to you, I make these regularly and haven't had this problem, though I do leave them to cool in the tin. Have you tried leaving them before removing them?

I made this today and while the recipe is great and delicious, despite using paper muffin containers inside a dedicated metal muffin tray, the muffins are stuck to the paper. I used coconut oil to grease the muffin tray, but do you have a better suggestion please as the paper muffin cases were a tad charcoaled at the bottom?

Absolutely. If you are allergic to nuts or prefer not to use almond flour (ground almonds) for any other reason, you can replace it with quinoa flour. 200g or 2 cups of almond flour can be replaced with 120g or 2 cups of quinoa flour.

Can I use quinoa flour instead of almond flour in this recipe too please?

It is best to grate them. Recipe has been updated.

With the carrots do I grate them into the mix or finely chop them?
