Collagen-Rich Oxtail Stew – A Nourishing Slow-Cooked Recipe

This Collagen-Rich Oxtail Stew is a comforting, nutrient-dense dish, packed with flavour and ingredients that support overall health and wellbeing. Slow cooking allows the meat to become beautifully tender while releasing gelatin from the collagen-rich connective tissues and bones.

Oxtail is naturally rich in collagen, a structural protein that supports skin, joints and connective tissues. Collagen provides amino acids, including glycine and proline, which play important roles in maintaining healthy tissues.

Garlic and onions bring more than just flavour to this nourishing stew. Garlic contains sulphur compounds, including allicin, which have demonstrated anti-inflammatory and antimicrobial properties in laboratory studies. Onions also provide beneficial plant compounds and prebiotic fibers that support gut health.

Carrots contribute beta-carotene, a powerful antioxidant that the body converts into vitamin A, supporting immune function and healthy skin. They also provide fiber to help nourish beneficial gut bacteria.

Fresh rosemary, thyme and paprika add aromatic flavour and beneficial plant antioxidants, while miso, anchovies and Dijon mustard create a delicious depth of umami.

At Eat Burn Sleep, we also offer dedicated Inflammatory Bowel Disease (IBD) advice, including guidance for Crohn’s disease and ulcerative colitis, exploring how nutrition and lifestyle can support digestive health alongside medical treatment.

Serve this delicious slow-cooked oxtail stew with sweet potato mash or quinoa and your favorite greens for a satisfying, nourishing meal.
