Yes of course, though I would advise you to chop the spinach before you cook it, else you can end up with some long bits of wilted spinach getting stuck down your throat. You could also just blend half. The rest of the steps remain the same. Adding cumin and mustard seeds will bring a morearomatic, nutty and earthy taste to the curry, let us know how it goes.

At Step 6, could you avoid both adding the water & using the hand blender in order to have a more textured Spinach curry, than a blended option? If yes, are the remaining steps simply continued? At Step 8, could you also add in cumin and mustard seeds here? TY

garlic granules can be a good substitute :) but better to use the original spice

You can omit if you don't have it or add extra garlic, though it will change the aroma and taste to the original recipe
