Roasted Sweet Potato and Garlic

This simple side dish of roasted sweet potato and garlic pairs well with any main meal or lighter lunchtime salad. Sweet potato is packed with gut-nourishing fiber and antioxidants. The distinctive orange flesh gets its color from beta-carotene, a type of carotenoid that converts to vitamin A in your body.
