Breakfast Cookies

Start your day with confidence with these nourishing Breakfast Cookies, designed to support your digestive health and give you a boost for the day ahead. These cookies do more than just taste delicious, they’re packed with ingredients that aid in regulating the digestive system. With its prebiotic properties, psyllium nourishes intestinal bacteria, reduces digestive discomfort, and helps control the body’s glycemic response to food. By alleviating constipation and treating diarrhea, these cookies give you the confidence to enjoy your morning without the challenges associated with digestive conditions like Crohn’s and colitis.

The combination of nuts and seeds delivers a powerhouse of anti-inflammatory compounds, along with protein, fiber, iron, omega-3s, and essential vitamins. These ingredients also help promote hormone balance, support healthy skin and hair, and assist in toxin removal from the body. To top it off, the dried cranberries add a powerful dose of antioxidants, offering antibacterial and astringent benefits to support overall health.

Honey and coconut oil bring their medicinal healing properties to the recipe, aiding digestion and helping to soothe the body.

For optimal results, remember to drink plenty of water alongside these cookies to keep your digestive system hydrated and functioning smoothly.

These Breakfast Cookies are the perfect start to your day, providing a delicious, gut-friendly boost that supports overall wellness and keeps you feeling great all morning long.

Hi Keeley, they are the same as just psyllium husks. I have updated the recipe accordingly.

Hi Can you tell me what whole psyllium husks are and how necessary are they to the recipe. Thank you.

Yes that should be fine, they might not be as sweet though I'm sure your baby will still enjoy them!

Hi, I love these cookies and bake them as traybake and cut into squares. MUCH quicker for a busy mum. I have an under 1 year old so I need to replace honey with something...do you think maple syrup would be sticky enough? Would recommend anything else? Thanks Tess

Hi Yalda, love this recipe particularly when I’m in a rush to leave the house early in the morning. I wanted to share a tip with you. I always have difficulty shaping the cookies and getting them all to be the same size. I now use my plastic 1/4 cup measuring cup to press the mixture in and then tap it onto the lined baking sheet. So quick and easy! ( I wanted to upload a photo but couldn’t do it here)😊 Thanks for your amazing work!❤️

Also instead of dried cranberries, could you substitute with goji berries? ty

If you are having this for your breakfast what else would you be having? Or is this more a snack option?
