This was loved by my colleagues and friends who commented on how moist it was and not overly sweet. That's partly due to the fact that I only used 80 - 100g of coconut sugar as bananas are naturally sweet and I didn't add any nuts, which can be bitter in cooking, hence more sugar would be required. However, I have to add that as I use quinoa flour, the brand really makes a huge difference. In case anyone is in Saudi Arabia at the moment and unable to travel, Agrofina (available at Lulu supermarket) is the best for this recipe as Bob's Redmill is too heavy and makes it dry and dense. I also want to add, my first attempt of making banana bread ever was a couple of weeks ago with the Agrofina Quinoa flour and I am pretty pleased with my first attempt, as were my colleagues! Great recipe. Absolutely delicious.

I would have to test the recipe but I think you should aim for 30% more dates in weight than coconut sugar to get the right taste. let me know if it works, I think it should!

This was a huge success! I made this in the weeks leading up to starting the 6 week reset to start to familiarize myself with some of the new ingredients and styles of baking/cooking. It came out delicious and was easy to freeze the slices with little pieces of parchment in between so we could enjoy it for longer! This also helped me portion the slices correctly. I now have friends asking me to make more! I had a cook time of closer to 1 hour in my static oven but it was easy to check doneness with a toothpick!
