Quinoa Stir Fry

An easy-to-digest, nutrient-rich recipe for reducing anxiety and mental health, fighting inflammation, and promoting gut health.

This is a simple dish that is packed with complex mind-and-body boosting nutrients. It is so high in protein and fiber and contains all of the essential amino acids that the body loves for great energy levels. It is perfect for the anti-inflammatory diet because it is gluten-free, too.

Following this lifestyle will improve mental health since all recipes could be considered anti-depressant foods – and quinoa comes with some extra surprises. There are two anti-depressant flavonoids that are present – Quercetin and Kaempferol.

  • 1 cup or 180g of quinoa
  • 2 cups of vegetable broth
  • 1 onion
  • 4 garlic cloves
  • 1 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp ground pepper
  • Optional: Curly parsley to garnish


  1. Rinse the quinoa.

  2. Place the rinsed quinoa and 1 cup of broth in a saucepan. Bring to the boil, simmer for 5 minutes and turn the heat off, allowing the quinoa to absorb the liquid.

  3. Place a pan on medium heat and add the olive oil. Add the chopped onion and crushed garlic. Cook for 5-7 minutes until the onion softens, so it starts tasting sweet.

  4. Add the quinoa, salt, pepper, and remaining broth.
    Turn the heat up, bringing it to a boil. Turn the heat to low and let it simmer until all the liquid has been absorbed, covering the pan for about 5 minutes.

  5. Your quinoa is ready!
    Garnish with chopped parsley or any herbs and serve.

Serving Tips

Tip: You can replace the salt with soy sauce if you want to give it an Asian twist.

This dish can be prepared in advance. It keeps in the fridge for up to 2 days.
