Balsamic Roasted Vegetables

Ingredients

  • 1 eggplant
  • 1 zucchini
  • 1 bell pepper
  • 1/2 broccoli
  • 15 cherry tomatoes
  • 1/2 cup black olives
  • 10 garlic cloves
  • Sea salt
  • Olive oil
  • Optional: chopped chives to garnish
  • Dressing : balsamic aioli dressing
  • Or 1 tbsp mayonnaise + 2 tbsp balsamic vinegar

Directions

  1. Preheat the oven at 200 C / 400 F fan.

  2. Chop all your vegetables, leaving the cherry tomatoes, garlic cloves, and olives whole.

  3. Place all the vegetables on a baking tray. Sprinkle with a pinch of sea salt and give it a spray of olive oil.

  4. Bake for 30 minutes at 200 C / 400 F fan.

  5. Prepare the dressing in the meantime.

  6. Take it out of the oven and let the vegetables cool down for 5-10 minutes.

  7. Place all the vegetables in a large bowl, add the dressing, sprinkle the herbs, toss and enjoy!
