Banana & Blueberry Nice Cream
Not only gut healing ultimately, as part of your daily anti-inflammatory eating, but as with all EBS recipes, the ingredients are nutrient-packed.
Digestive-friendly bananas contain the essential mineral potassium, which is terrific for maintaining blood pressure and heart function. They are also packed with fiber, which decreases heart disease risk and sterols. Sterols block dietary cholesterol, keeping cholesterol in the blood low, too.
Blueberries are anti-inflammatory, anti-diabetic, anti-cancer, heart-protecting, and neuroprotective too. Vitamins K and C, manganese, copper, and fiber are found in blueberries. Any inflammation-reducing foods aid the reduction of neuroinflammation, too.
Coconut milk contains lauric acid, which is anti-inflammatory and excellent for gut health. If you add honey, that is anti-inflammatory, as well as a good antioxidant (removes potentially damaging agents in the body).
This is a fabulous dessert for your gut, brain, and tastebuds!
- 2 frozen ripe bananas
- 1 1/3 cup or 190g of frozen blueberries
- A drop of coconut milk (or any nut milk)
- 1 tsp of honey (optional)
- Any toppings you like: blueberries, pecan nuts, flaked almonds, dark chocolate chips, banana etc.
Place frozen bananas and blueberries in your blender and make sure to push them towards the bottom regularly with a spatula.
About halfway, add a splash of coconut milk to soften the mix, and slowly repeat if needed.
Taste and add a bit of honey if needed (it depends on how sweet your blueberries are).
Sprinkle your favorite toppings and enjoy!
