- 3 medium size zucchini
- 1/2 teaspoon of sea salt
- A crunch of black pepper
- 1 tablespoon of olive oil
- Preheat your oven on the grill/broiler mode. Cut the zucchini length-wise and place in a baking dish. Sprinkle with sea salt, a scrunch of black pepper, and drizzle the olive oil.
- Place under the grill for 10 minutes or until it darkens. Take out of the oven and serve immediately as a side dish.
You can keep the leftovers and use them in a salad, lunch box, or as an omelet topping.
