Good Carbs Recipes

Unprocessed good carbs will improve your mood and sleep.

They increase a protein called tryptophan in your brain, which is a building block for both serotonin and melatonin.

Serotonin is a neurotransmitter that controls sleep as well as mental wellbeing, while melatonin is a hormone that promotes a regular sleep-wake cycle.

White good carbs soup is so delicious, and provides your body with good nutrition that in a healthy gut, is well-absorbed, which also promotes the production of feel-good neurotransmitters in the gut.

Ingredients

  • 1 celeriac
  • 3 parsnips
  • 1 onion
  • 4 garlic cloves
  • 2 bay leaves
  • 2 cups or 500ml of vegetable stock
  • 34fl oz or 1l of water
  • 2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp grated nutmeg
  • 1 tbsp olive oil

Directions

  1. Rinse the vegetables and cut them into medium-sized pieces. There’s no need to peel them, as most nutrients are in the skin.

  2. Slice the onion and crush the garlic.

  3. Heat the olive oil in a deep pan on medium heat and fry the onion and garlic for around five minutes until translucent.

  4. Add the parsnips and celeriac and fry for another five minutes.

  5. Add the water, vegetable stock, salt, pepper, nutmeg, and bay leaves to the pan.

  6. Bring to a boil, then reduce the heat. Let it simmer for around 30 minutes or until the vegetables are very soft.

  7. Turn the heat off and let it cool down for 5 minutes.

  8. Blend using either a hand blender or a food processor, and the soup is ready to be enjoyed!
