White Good Carbs Soup
Unprocessed good carbs will improve your mood and sleep.
They increase a protein called tryptophan in your brain, a building block for serotonin and melatonin.
Serotonin is a neurotransmitter that controls sleep as well as mental well-being. Melatonin is a hormone that promotes a regular sleep-wake cycle.

Ingredients
- 1 celeriac
- 3 parsnips
- 1 onion
- 4 garlic cloves
- 2 bay leaves
- 2 cups or 500ml of vegetable stock
- 34fl oz or 1l of water
- 2 tsp sea salt
- 1/2 tsp black pepper
- 1/4 tsp grated nutmeg
- 1 tbsp olive oil
Directions
Rinse the vegetables and cut them into medium-sized pieces. There’s no need to peel them, as most nutrients are in the skin.
Slice the onion and crush the garlic.
Heat the olive oil in a deep pan on medium heat and fry the onion and garlic for around five minutes until translucent.
Add the parsnips and celeriac and fry for another five minutes.
Add the water, vegetable stock, salt, pepper, nutmeg, and bay leaves to the pan.
Bring to a boil, then reduce the heat. Let it simmer for around 30 minutes or until the vegetables are very soft.
Turn the heat off and let it cool down for 5 minutes.
Blend using either a hand blender or a food processor, and the soup is ready to be enjoyed!

Store this dish in the fridge for up to 5 days or in the freezer for up to 3 months.
