Healthy Speculoos Biscuits
A spectacular speculoos biscuit recipe: the healthy version of the traditional recipe, which means that your gut microbiota will love them, too!
The warming, sweet, aromatic, creamy, citrus, peppery, and spicy flavors make these biscuits incredible. They are so nutritious with gut-healthy properties that your immune system (since 70% of immune cells reside in the gut) will thank you for them.

Ingredients
- 2 cups or 200g ground almonds
- 1/3 cup or 70g softened coconut oil
- 1/2 cup or 100ml maple syrup
- 1 tbsp arrowroot powder
- 1 1/2 tsp cinnamon powder
- 1/2 tsp ground ginger
- 1/4 tsp ground cardamon
- 1/4 tsp ground anise
- 1/8 tsp ground clove
- 1/8 tsp ground ground pepper
- 1 tsp vanilla extract
- Extra ground almond to roll the dough
- Flaked almonds to decorate
Directions
Preheat the oven to a 160 C / 380 F fan.
Mix all the dry ingredients in a bowl. In the same bowl, add the wet ingredients and mix well until combined. If your mixture is too wet, you can place it in the fridge for 10 minutes.
Place some parchment paper on your work surface and dust it with ground almonds. Place the dough and roll it flat with a rolling pin.
Use a cookie or pizza cutter to cut your cookies. Use a spatula to delicately transfer each cookie onto a baking tray lined with baking paper or a baking sheet.
Sprinkle some flaked almonds to decorate and bake for around 15 minutes.
Once the cookies are out of the oven, let them cool down for 30 minutes before enjoying them. This will allow them to be crunchy and delicious.
