Immune-boosting Energy Balls

These immunity-boosting energy balls are perfect for keeping you in tip-top form when you feel a little dip and fancy something sweet.

They do precisely what they promise, but you must taste these nutritious beauties. Dates are delicious and high in potassium, promoting an efficient metabolism and healthy nervous system. Fibre will keep your bowels regular. Tannins will treat stomach issues.

Bone-building protein and other powerful minerals like magnesium help digestion and calm the mind and body. Zinc will look after your immune system, and boron helps to build muscles and treat arthritic conditions. Then, there’s the supply of slow-release natural sugars. They pack in so much more.

Cashews bring more goodness to the table in the form of minerals for bone health, monounsaturated oleic acid, and omega-3 alpha-linolenic acid, which help protect against cancer and heart disease. Then there’s tahini, which is so nutritious and contains a whole host of beneficial properties and anti-inflammatory compounds. Dark chocolate chips round this recipe off with a good dose of iron, zinc, copper, magnesium…the list goes on!

Plus, these little energy boosters are portable. Perfect!

 

Ingredients

  • 1/3 cup or 200g of raw cashew nuts
  • 9-12 medjool dates
  • 2 tbsp of tahini
  • 1/4 cup or 40g of dark chocolate chips
  • Sesame seeds to decorate

Directions

  1. Place the cashews and dates in your food processor. Start blending and add the tahini. Continue blending until it forms a paste that’s easy to roll. You might need to add dates (the number of dates needed depends on their consistency).

  2. Once the mix forms a nice paste, remove it from the food processor and fold in the chocolate chips, mixing by hand.

  3. Roll the paste into balls which you can then roll into the sesame seeds to decorate.

  4. Place in the fridge and enjoy anytime!

Storage Tips

These energy balls keep better in the fridge up to 10 days and can be kept in the freezer up to 3 months.
