  • 1 medium cucumber
  • 350g or 12.3oz of coconut yoghurt
  • 3 tablespoons of finely chopped mint leaves
  • 1 tablespoon of finely chopped coriander leaves
  • 1 teaspoon of ground cumin
  • 1/2 teaspoon of sea salt (or to taste)
  • 1/4 teaspoon of ground pepper
  • Juice of 1 lime


  1. Peel and grate the cucumber. Rig all the water out squeezing it.
  2. In a bowl, place the cucumber and all other ingredients.
  3. Mix well and decorate with mint leaves before serving.
