- 1 medium cucumber
- 350g or 12.3oz of coconut yoghurt
- 3 tablespoons of finely chopped mint leaves
- 1 tablespoon of finely chopped coriander leaves
- 1 teaspoon of ground cumin
- 1/2 teaspoon of sea salt (or to taste)
- 1/4 teaspoon of ground pepper
- Juice of 1 lime
- Peel and grate the cucumber. Rig all the water out squeezing it.
- In a bowl, place the cucumber and all other ingredients.
- Mix well and decorate with mint leaves before serving.
