Texture, flavor, nutrition, and color make a wonderful lunchbox.
- 1 gem lettuce
- 3 carrots
- 6 radishes
- 1/2 avocado
- 1 can of mackerel in olive oil drained (125g)
- 1 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1/2 tsp sea salt
- 1/8 tsp black pepper
Rinse and chop the lettuce, cut the carrots into slices, halve the radishes and chop the avocado into medium size cubes.
Put the dressing ingredients into a small container.
Add all your ingredients to the lunchbox with the mackerel and store in the fridge or a cooler bag until needed, adding the dressing just before eating.
This dish can be prepared in advance. It keeps in the fridge for up to 2 days without the dressing mixed in.
